Frangipane

Ingredients

  • puff pastry dough
  • 100g sugar
  • 80g butter at room temperature
  • 3 eggs
  • 230g almond powder
  • vanilla
  • 3 spoons of rum (alcoholic beverage)
  • 1 egg for decoration

~35cm/27cm rectangular platter or ~27cm diameter circular platter

Preparation

Separate the pastry in two equal parts, both the size and shape of your platter. Put the pastry back to the fridge while you are preparing the filling.

Preheat the oven at 200°C.

In a bowl, mix the almonds with the sugar, then incorporate the butter at room temperature. Mix with the hands.The mixture should be solid and sticky now. Add the eggs one by one. Now the mixture should be semisolid, easy to be mixed with a spoon. Add vanilla and rum.

Take the pastry out of the fridge and put the bottom part in the platter. Put the filling on the pastry, leaving 2 cm of empty borders. Put a bit of water or egg yellow on the borders, then arrange the other half of the pastry on top, sticking firmly the borders together. Make some models on the top, with a knife, without piercing the pastry. Decorate with the egg yellow.

Put in the oven at 180°C, for 25 minutes. Its ready when the Frangipane looks golden and becomes a bit rigid.
