Carrot, Ginger, Orange soup
Food is no longer here just to keep us alive; it`s a complex experience, edible art, a meditation... Try this soup! Fresh smell, powerfull color, strong surprising taste, creamy texture.. Notice how all your senses get involved in this eating experience; an involuntary immersion in the present moment!
Ingredients
- 1 big onion (or 2 small)
- 6 carrots
- juice from 3 oranges
- 2 + 1/2 tablespoons of chopped ginger
- 1 liter of water
- salt
- 1 tablespoon of sunflower oil
- 200g sour cream
- 100g sunflower seeds
Preparation
Chop the onions and carrots and add them in a pot of 1 liter boiling water. Cover with a lid. Grate or chop the ginger in little pieces and add 2 and 1/2 spoons to the boiling soup. Add the oil. Let it boil for ~20min (until the carrots are soft). Add the orange juice and the salt. Let it boil a bit more and then take it off the stove. Mix everything with a strong blender. The result should be a creamy mixture. Add 200g of sour cream and its ready! Optionally, for a vegan recipie, you can skip the sour cream. Also, if you want the soup more liquid, add 1 cup of boiling water.
Roast the sunflower seeds in a pan until they are golden (~1 minute). Put the soup in a bowl and add the seeds on top of it.
For a stronger experience, use a dark-coloured plate!
